Quick And Easy Family Recipe: Ginger Salmon

Follow this quick and easy to follow recipe, for a delicious salmon and potato dinner for the whole family.

Serves four

4 fresh salmon fillets

3 tablespoons sweet chilli sauce

Half an inch ginger, finely chopped

1 clove garlic, finely chopped

3 tablespoons soya sauce

Splash of lime

Combine the garlic, ginger, soya sauce, sweet chilli sauce and lime in a large bowl.

Add salmon fillets to the marinade, making sure that both sides of the salmon fillets are covered with the marinade.

Allow to marinade for 10-30 minutes, depending on how much time you have.

Place the salmon fillets on a non-stick oven tray, pouring the remaining marinade over them.

Bake in an oven for 15-20 minutes on 190 C or until the salmon is cooked all the way through (please note: cooking time will depend on the thickness and size of the fillets).

Serve with steamed broccoli and mange tout, and some potato chips , for a tasty family meal.

How to tell if Salmon is fresh

To see if salmon is fresh, press it gently with your finger. If it is fresh, the flesh will spring back without leaving an indent of your finger. Also, it should not smell of fish, but rather it should smell of the sea. If you are buying a whole salmon that has not yet been filleted, make sure that the eyes are clear and bright, and that they do not appear to be cloudy. The fish should also feel firm when you pick it up.

Types of salmon

Wild salmon is normally the most expensive type of salmon and tends to be a darker pink, as compared to farm raised salmon which is a lot paler in colour. Wild salmon tends to be a firm fish to touch, as the fish has been reared in nature and has therefore put its muscles to good use. You can also buy organic salmon, which has been farmed, and is overseen by strict guidelines to ensure that it fits the rules and regulations for organic produce.
